In the Ligurian town of Alassio, which in the early twentieth century the composer Edward Elgar exalted in the famous symphony In the South of Alassio, and which the writer Cecil Roberts praised in his Portal to Paradise, is Villa della Pergola.
Inside is the Nove Restaurant, which thanks to the talent and passion of chef Giorgio Servetto has obtained important awards in the main guides, and has become a reference point for the region, receiving a Michelin Star in the 2021 Guide.
The Nove restaurant was born in 2016 from the meeting between Villa della Pergola and chef Servetto, the only ambassador of Taste for Liguria, where he was born and raised, between the sea and the mountains of the Beigua Park.
In the kitchen of the Nove there is first of all a rigorous attention to the quality of the products, all coming from the surrounding area, an absolute respect for their seasonality and a continuous research to make the most of them. In addition to citrus fruits, edible flowers and aromatic herbs from the Villa della Pergola Gardens, the Nove draws for vegetables and fruit from the adjacent farm, a new project that just this year has begun to bear its first summer and autumn fruits. .
The Nove card itself is a manifesto of "Liguria": the opening tasting menu is called Orgoglio Ligure, precisely in celebration of the recipes, products and producers of a region to which the restaurant is united by an almost visceral relationship.
Three tasting menus, one of which entirely vegetarian, and the à la carte menu, lead guests of the Nove on a journey to rediscover the flavors of the Ligurian tradition in their contemporaneity, in which the chef and his team become spokespersons and guardians of the territory.
The restaurant is nestled in the botanical Garden of Villa della Pergola, inside Villa della Pergola, a historic residence with 15 suites divided between the Villa, the Villino, Casa del Sole and Casa Wisteria.
